In Grasse-the perfume capital-the alcohol is carefully removed, leaving a whisky at 0.0% ABV (the ethanol goes on to fine perfumery). Back in a historic 1875 French distillery, it's redistilled in century-old pot stills with toasted oak bark, cloaking the spirit in notes of toffee, caramel, and cocoa for a bourbon-style profile-without the alcohol.
